Juniper berries

Incorrectly known as “berries”, these are the female seed cones of the juniper tree. They give a piney freshness and is every gin’s most important ingredient. Juniper is what defines a spirit as gin.

Coriander seeds

Coriander seeds are excellent to pair with juniper as they carry similar compounds. Coriander adds citrus to our gin with a hint of warm spice.

Angelica root

The roots of the Angelica plant are musky and bitter which is a classic for a London Dry. They are believed to have bonding properties keeping all the other botanicals together into a balanced and long-lasting flavour profile.

Bitter orange peel

We like to think of these wonders from Seville as the “orangiest” of oranges. They have a fragrant orangey bitterness reminiscent of marmalade and orange liqueurs. They provide a warm and dry citrus background flavour to our gin.

Fresh lime peel

Limes are a kick of freshness, their tart and citrus flavour is powerful, cool and refreshing. We enhance the zestiness and freshness by using freshly hand-peeled limes, creating a perfect bond with our marine botanicals.

Atlantic dulse

This dark red translucent seaweed is a favourite and is a great example of the variety and uniqueness of marine flavours. Dulse adds deep ocean flavour to the palate.

Kombu kelp

Kombu takes the lead mid-way through our flavour journey providing marine freshness reminiscent of the ocean breeze.

Sea fennel (rock samphire)

Sea fennel grows on the English rocky coasts and cliffs. It is also known as rock samphire; however, it is unrelated in both flavour and biology to the more well-known marsh samphire. Sea fennel gives a crisp sea saline herbal taste with a very discreet fennel flavour.

Lulo

First enjoyed by the Incan empire in South America, lulo is now a popular fruit in Colombia and Ecuador. Writers have described it as “the golden fruit of the Andes” and “the nectar of the gods”. We source our lulo from a sustainable family business in Colombia. Nobody eats the fruit straight as it is one of the most acidic and bitter fruits. Instead, its citrus is used to flavour drinks and desserts. Lulo has an absolutely delightful flavour which is truly particular and indescribable. It surfaces in our gin as tropical freshness and tart citrus notes that emerge early in the flavour profile before dissipating into the background.

Sakura

Sakura flowers (cherry blossoms) are just beautiful, they are very symbolic and important in Japanese culture. Because the flowers are very short lived, they are a powerful metaphor for the ephemeral beauty of life, reminding us that life is short and should be enjoyed to the most. Nonetheless, each spring the trees will replenish with new blossoms; thus symbolising renewal, hope and new life. Our Japanese sakura gives subtle floral notes, leaving a hint of “spring” in our gin.

Tonka beans

Tonka beans are the seeds of rainforest trees from the Amazon. Ethical sourcing of this ingredient is essential for rainforest conservation and local communities. The beans have an intense sweet flavour and aroma evocative of caramel, vanilla, cinnamon and almonds. The flavour is like no other but easily recognizable at the finish of our flavour journey. Tonka remains in your mouth long after the gin is already gone, leaving that warmness and nutty tropical sweetness behind.

Balsam fir tips

Not only is balsam fir the most fragrant of all firs, but its tips are citrusy and sweet as opposed to most pine/fir needles which are bitter. We went to the French Canadian region of La Gaspésie to source our sustainably foraged balsam fir tips from a lovely family living in the beautiful forest. The tips help boost the piney nature of the juniper while giving it a sweet citrus twist. A true taste of Christmas and the Canadian boreal forest.

Pink pepper

Pink pepper (which is technically a berry rather than a peppercorn) is a vibrant and intriguing ingredient native to Peru. Since the Peruvian Wari tribe (600AD) used pink pepper to flavour chicha (a beer made from chewed grains and saliva), pink pepper has a long history with alcoholic beverages and is now becoming a more familiar gin botanical. It is lightly spicy and peppery but is also fruity and piney which makes it such a remarkable accord for juniper berries and marine botanicals. Pink pepper’s fruity heat gives complexity and depth to our gin.

Tasting notes

Our flavour is a beautiful journey. Marine notes tell the story of ocean travel to discover intriguing coastal and land botanicals from different continents. Each botanical’s charm emerges at different parts of the flavour journey, each sip tells a story different from the previous one, yours to explore!

NOSE

Juniper and balsam fir accompanied by crisp and bright citrus notes of lime and oranges.

PALATE

Citrus freshness with gentle juniper give way to a subtle marine breeze that remains in the background. Layers of dry and sweet flavours travel through the palate combining a classic dry base with peaks of tropical and intriguing sweetness.

FINISH

An enduring and well-rounded finish of sweet almonds, peppery spice and a subtle reminder of the ocean.
